Who we are

Pipsqueak Bagels was built on a passion for food and a desire to bring authentic, hand-rolled bagels to Portland, Oregon. Founder and owner Madilyn Gibbons has spent her entire life working with food, seeing every facet of the restaurant industry—from the back of house to specialized cheesemonger. Madilyn’s varied background led her to bagels and bread making, fueling an unrelenting mission to honor the tradition of bagel making and share the joy of what an authentic bagel experience should be.

Founded in 2024, Pipsqueak Bagels started at the Milwaukie Farmers Market and quickly grew in popularity. From its inception, Pipsqueak has been committed to collaborating with local businesses and brands, which led to a pop-up presence in Portland and a long-standing residency with coffee legends like Puff Coffee. As demand grew, Madilyn and her co-owner husband, Cam Gibbons, listened to their community and worked to bring their passion to a permanent location, opening in April 2026.

While the setting has changed to a permanent storefront, the mission remains the same: to create community through the shared joy of traditional, fresh bagels. Pipsqueak Bagels is honored to join the daily fabric of the Portland food scene, offering a true neighborhood hub. We look forward to seeing you in April 2026!
